A skinning, pneumatic knife, is used for skinning carcasses before the skinning operation. Skinning is a very laborious operation and largely determines the sanitary cleanliness of the raw material, since any errors during skinning lead to contamination of the raw material. Hand knives of the appropriate shape are used for skinning. A more modern and highly productive option is the use of special skinning knives. Such a knife is a “close relative” of a circular saw, since the skin is separated by a rotating toothed disk.
